Ingredients

For the Cake:

– 1 package (4 oz) Baker’s German’s Sweet Chocolate

– 1/2 cup boiling water

– 2 cups all-purpose flour

– 1 teaspoon baking soda

– 1/4 teaspoon salt

– 1 cup (2 sticks) butter, softened

– 2 cups sugar

– 4 eggs, separated

– 1 teaspoon vanilla

– 1 cup buttermilk

For the Coconut-Pecan Frosting:

– 1 can (12 oz) evaporated milk

– 1-1/2 cups sugar

– 3/4 cup (1-1/2 sticks) butter

– 4 egg yolks, slightly beaten

– 1-1/2 teaspoons vanilla

– 1 package (7 oz) coconut (about 2-2/3 cups)

– 1-1/2 cups chopped pecans

Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round baking pans.

Step 2: Melt the chocolate in boiling water and let it cool. In a separate bowl, mix flour, baking soda and salt.

Step 3: Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Add egg yolks, one at a time, beating well after each. Blend in the melted chocolate and vanilla. Add flour mixture alternately with buttermilk, beating until well blended after each addition.

Step 4: Beat egg whites in a small bowl with an electric mixer on high speed until stiff peaks form. Gently stir into the batter. Pour evenly into prepared pans.

Step 5: Bake for 30 minutes or until a toothpick inserted in centers comes out clean. Immediately run a small spatula around cakes in pans. Cool cakes in pans for 15 minutes, then remove from pans to wire racks. Cool completely.

Step 6: For the frosting, mix milk, sugar, butter, egg yolks and vanilla in a large saucepan. Cook on medium heat for about 12 minutes, or until thickened and golden brown, stirring constantly. Remove from heat and add coconut and pecans, mixing well.

Step 7: Assemble the cake by spreading the frosting between layers and on top of the cake.
