We have left behind the generosity of summer and prepare for the rigors of winter, but October is not a mere transit, it unfolds with its own personality.

For some, for example, it brings the nostalgia of childhood, of wellies and races among apple trees and quinces in the cool and humid orchards of northern Spain.

Why not relive that feeling? If you have the possibility to go to an orchard and pick the apples yourself, do not hesitate to do so: take a basket and fill it with this crunchy fruit in the month in which it reaches the point of ripeness, when its flavor and freshness are maximum. You can eat them as they are or take advantage of them in delicious cakes.

If you are going to bake them, choose suitable varieties: the Granny Smith (they are acidic and firm), the Fuji (very crunchy), the Gala, the Reineta (the balance between their sweetness and acidity is perfect) or even the pearl rose or pink pearl, which are not easy to find, but have a nice pink color, a thin skin and aromatic raspberry notes.

Here we present, in vegan version, the classic apple pie or “apple pie” that the United States has made its own and that cannot be missing in the dessert menus of a celebration.

APPLE CAKE WITH PUFF PASTRY: RECIPE

Preparing a delicious apple pie with puff pastry at home is easier than you think. We leave you a super easy and delicious recipe that you can adapt to your taste and that, in addition, is vegan.

INGREDIENTS

  • 3 apples
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons lemon juice
  • 1 sheet of vegan puff pastry
  • Natural nuts (walnuts, hazelnuts, cashews …)

PREPARATION (30 MINUTES):

  1. Preheat oven to 200°C.
  2. Peel the apples, undo them and cut them into sheets or crescents about half a centimeter wide.
  3. In a bowl, put the apple slices, cinnamon, nutmeg, lemon juice and maple syrup. Mix everything and let it sit for about 15 minutes.
  4. On a slightly floured surface, spread the puff pastry sheet (previously thawed, if you use frozen puff pastry) until it fits the mold you will use to make the cake. Place the puff pastry in the pan, pressing it on the bottom and sides, and trim the excess part, if necessary.
  5. Place the apple crescents on top of the puff pastry lined mold, so that they are well distributed and cover the entire dough. Add peeled nuts on top to give a crunchy touch.
  6. Bake the cake for about 20-25 minutes or until you see that the puff pastry inflates and is golden and crispy.
  7. Remove the cake from the oven and let it cool for a few minutes before serving.

APPLE PIE WITH BROKEN DOUGH: RECIPE

INGREDIENTS FOR 4 PEOPLE

  • 1 sheet of broken dough (without animal fats or other ingredients of animal origin)
  • 2 apples
  • the peel of 1 orange
  • the skin of 1 lemon
  • cinnamon sprigs
  • a piece of ginger (such as 1 teaspoon) or <>/<> teaspoon ginger powder
  • 3 tablespoons lemon juice

PREPARATION:

  1. If the broken dough is frozen, let it thaw.
  2. Boil 3 cups of water with the orange and lemon peels, cinnamon and ginger. When it starts to boil turn off the heat, remove it and let it cool.
  3. Add the lemon juice to the cold infusion.
  4. Wash the apples and cut them into thin stripsImmerse them in the infusion with lemon juice, cover them and let it rest all about 15 minutes.
  5. Preheat the oven to 220 ºC or whatever the instructions of your broken dough say. Spread it on baking paper and place the apple strips on top, rolled on themselves.
  6. Place the cake in the oven on medium height for about 20 minutes or until golden brown.
  7. Take it out of the oven and brush it lightly with the infusion of orange and lemon.
