The best thing you can do with ripe and dark bananas is undoubtedly a delicious and succulent banana bread. Banana bread can be prepared in many different ways depending on the ingredients you choose.

But no matter if your banana bread is low-carb, vegan or gluten-free, the main thing is that banana bread should have a delicious taste and juicy texture.

Unfortunately, this is not always possible and the disappointment is great when freshly baked bread is too dry and breaks as soon as you cut it. However, if you follow this recipe and the tips we will give you, your banana bread will be a success.

BANANA BREAD: THE MOST DELICIOUS EASY RECIPE

Ingredients:

  • 3 very ripe bananas
  • 200 g spelt flour
  • 100 g unsweetened homemade applesauce
  • 50 g extra virgin olive oil
  • 1 packet baking powder
  • 2 eggs
  • 50 g nuts (walnuts, almonds, hazelnuts)

Elaboration:

  1. Mash the bananas with a fork, then beat with the egg yolks and applesauce until foamy.
  2. Mix the flour with the baking powder. Slowly add the egg mixture to the flour and baking powder and mixing mixture. Add the egg whites to the point of snow very carefully. Finally add the nuts and pour the dough into a bread pan previously lined with baking paper or smeared with oil and breadcrumbs.
  3. Bake the banana bread at 180 degrees for about 45 minutes.

TIPS FOR MAKING THE PERFECT BANANA BREAD

1. USE ENOUGH BANANAS

Bananas are crucial for a juicy texture. The more bananas you use, the more soaked the dough will be. For your banana bread to be perfect, you should use two to three medium bananas. The riper the bananas, the smoother the texture of the fruit and the sweeter the banana bread will taste.

2. USE A FATTY INGREDIENT

If you completely avoid fat in the form of butter, margarine or oil, you will save calories, but unfortunately also juiciness. Banana bread will taste dry and crumble easily.

A good option is to reduce some of the fat with low-fat quark cheese or applesauce. You should apply the following: replace the proportion of butter or oil with twice the amount of quark or applesauce. For example, you can replace 100 grams of butter with 100 grams of applesauce and 50 grams of butter.

3. ADD THE BEATEN EGG WHITES

If you are baking banana bread that includes eggs, separate them beforehand, beat the egg whites to the point of snow and carefully incorporate them into the dough. The beaten egg white guarantees a particularly airy and juicy consistency. Ideally, use organic eggs, as they have a firmer consistency, which makes whipped cream more stable.

4. ADD BERRIES TO THE DOUGH

If you fancy an especially juicy banana bread, add fresh berries like blueberries, raspberries or currants. In addition, they give the bread a fruity note.

5. DON’T DO WITHOUT NUTS

Hazelnuts, walnuts or pecans, which you can add chopped, ground or whole to the dough, provide a delicious and crunchy note. Nuts also give you an extra serving of unsaturated fatty acids and healthy minerals like potassium, sodium and magnesium.

6. MIX THE INGREDIENTS CORRECTLY

When baking, all wet ingredients, such as eggs, milk or butter, are always mixed separately from dry ingredients, such as flour or baking powder. In order for the dough to be fluffy, butter and eggs must be at room temperature.

7. BAKE BREAD CORRECTLY

When you have put the finished dough in the pan, you should bake the bread at 170 to 180 degrees for about 40 to 45 minutes with the convection function.

To prevent the crust of your banana bread from getting too dark and dry, you should cover it with aluminum foil about halfway through the baking time. You can use a toothpick to know if the banana bread is ready or not. When no more dough sticks to the stick, your banana bread will be ready.

KEEP YOUR BANANA BREAD FRESH FOR A LONG TIME

In order for you to enjoy perfectly prepared banana bread for a long time, you need to store it correctly. As it is a very moist cake, the ideal is that you wrap it in an ecological beeswax wrap or put it in a container and store it in the fridge.

It keeps for about a week. Alternatively, you can also freeze your banana bread, so you can always taste it fresh and delicious.
