This type of oatmeal breakfasts are ideal to help maintain a healthy weight. They also help to have better concentration and strengthen the hormonal balance.

For the days when we are in a hurry, we can do a batch cooking and include this recipe for baked oatmeal with vegetables. In the morning we simply cut a portion, heat it and enjoy it with a little avocado or egg for a balanced breakfast. The recipe is very versatile and we can use the vegetables we have on hand.

INGREDIENTS FOR 8 SERVINGS

  • 2 cups oatmeal flakes
  • 2 cups vegetable broth or vegetable drink
  • 1 egg (or 1 tablespoon ground flax to make flax “egg”)
  • 1 teaspoon baking powder
  • 1.5 teaspoon salt
  • 4 tablespoons grated Parmesan or 2 tablespoons nutritional yeast
  • 2 tablespoons sunflower seeds
  • 2 red peppers
  • 2 garlic cloves
  • 200 g Swiss chard
  • 1 teaspoon herbs from Provence
  • 2 tablespoons olive oil
  • black pepper
  • salt

PREPARATION (15′ + 55′ COOKING):

  1. Preheat the oven to 180 degrees. Spread a baking pan with a little oil. If you are going to use the flax egg, combine in a bowl 1 tablespoon of ground flax with 3 tablespoons of water.
  2. Prepare the vegetables. Cut the peppers in half, remove the seeds and cut them into pieces. Peel and chop the garlic. Remove the stem from the chard and cut off the stems and leaves.
  3. In a frying pan, heat the oil. Add the peppers, the stems of the chard and garlic, a pinch of salt and cook about 7 minutes. Add the herbs, black pepper, chopped chard leaves and cook about 2-3 minutes more.
  4. While the vegetable is being made, in a bowl mix the oatmeal flakes with the baking powder and 1.5 teaspoons of salt. Add the broth or vegetable drink and an egg or flax egg. Add the parmesan or nutritional yeast and sunflower seeds and mix well.
  5. Once the vegetable is ready, add the vegetable and mix.
  6. Pour the mixture into the pan and bake for about 35-40 minutes until it is compact and begins to brown.

This original and sweet porridge of oatmeal is a healthy version of the famous carrot cake. You have below the complete recipe:

INGREDIENTS FOR 1 PERSON

  • half cup of oatmeal flakes (45 grams)
  • half a small carrot
  • 1 cup vegetable drink
  • 1 tablespoon raisins
  • 1 tablespoon walnuts
  • 2 tablespoons coconut yogurt
  • 1 teaspoon coconut oil or ghee
  • half a teaspoon of cinnamon
  • 1 teaspoon maple or honey syrup (optional)
  • a pinch of salt

PREPARATION (5′ + 10′ COOKING):

  1. Peel and grate the carrot. In a small pot, heat the coconut oil or ghee. Add the carrot, a pinch of salt and sauté for about 5 minutes. Add the cinnamon and give it a couple of turns in the pan.
  2. Add the oat flakes, vegetable drink and raisins and cook over medium-low heat until thickened, about 7-10 minutes for thick flakes and about 2-3 for thin flakes. Add more vegetable drink if necessary.

These cookies are crunchy digestive type cookies with a hint of ginger. If ginger isn’t your thing, just skip it and make cookies without it, with a little vanilla for example. One way or another, they are delicious.

INGREDIENTS FOR 14 COOKIES

  • 100 g oat flakes
  • 140 g whole wheat flour
  • 100 g whole cane sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ginger
  • 1 teaspoon cinnamon
  • 100 g butter or coconut oil
  • 4 tablespoons milk or vegetable drink
  • a pinch of salt

PREPARATION (15′ + 15′ COOKING):

  1. Preheat the oven to 170 degrees.
  2. Crush the oat flakes until you get a fine flour.
  3. In a bowl, combine the oatmeal, flour, sugar, salt, spices and baking powder. Mix well.
  4. Add the butter and vegetable drink and mix well. You should get a moldable dough. If it is too sticky, add a couple of tablespoons of flour.
  5. With the help of a tablespoon, take some of the dough and place in the palm of your hand. Make a ball, place on the tray, crush it and shape it into a cookie. Repeat with the rest of the dough. To decorate cookies, you can make a couple of holes with a fork.
  6. Bake for 12-15 minutes.

OTHER RECIPES WITH COOKIE OATMEAL

  • Oatmeal and apple cookies: With oatmeal flakes you can make soft and delicious cookies, biscuit on the inside and crispy on the outside, with two ingredients that combine wonderfully: apples and nuts. These also contain whole wheat flour and cane sugar.

  2. In a bowl, beat the vegetable drink with the eggs and oil. Add the dry mixture and mix well. Let stand 5 minutes.
  3. In a skillet, heat a little oil. With a spoon pour a quarter cup of the dough in the center and shape it into a pancake. Cook until set, about 2 minutes and turn it over. Kitchen on the other hand. Cook until the dough is finished.

  • 90 g fine oat flakes
  • 175 ml milk or vegetable drink
  • 200 g whole sugar
  • 120 ml olive oil mild flavor
  • 2 eggs or 2 tablespoons ground flax
  • 140 g whole wheat flour
  • 3 tablespoons baking powder
  • 2 teaspoons cinnamon
  • a pinch of salt
  • 2 tablespoons walnuts (optional)
  • 2 tablespoons raisins (optional)

PREPARATION (15′ + 35′ COOKING + 20′ REST):

  1. Pour the oatmeal flakes into a bowl, pour the milk or vegetable drink and let it absorb for about 20 minutes.
  2. After this time, start with the cake. Preheat the oven to 180 degrees. Spread a cake pan with a little oil.
  3. If you are going to use the flax egg, in a small bowl mix 2 tablespoons of ground flax with 6 tablespoons of water.
  4. Peel the apples, cut the center and cut them into small cubes.
  5. In a bowl beat the sugar with the oil. Crack the eggs and add to the mixture or add the flax egg and mix well.
  6. In another bowl mix the flour with baking powder, salt and cinnamon. Add the oat flakes and the wet mixture, pour into the flour and mix well.
  7. Add the apples, nuts and raisins and pour into a mold.
  8. Bake for about 35 minutes.

  • 350 g broccoli sprigs (can be frozen)

  • 2 tablespoons almond flour
  • half a teaspoon oregano or Italian herbal blend
  • half a teaspoon garlic powder
  • half a teaspoon onion powder

PREPARATION (15′ + 25′ COOKING):

  1. Preheat the oven to 200 degrees and line a baking sheet with vegetable paper or spread with a little oil.
  2. If you are going to use the flax egg, in a small bowl mix the flax with 3 tablespoons of water.
  3. Take a pot of water, add salt and cook the broccoli for about 3 minutes. Drain and pass through cold water. Dry thoroughly. You can also steam broccoli.
  4. Chop the broccoli and pour into a bowl. Add the rest of the ingredients and mix well.
  5. Place about 1.5 tablespoons of the dough in your hands, shape it into kibble and place on the tray.
